Apple of My Heart Galette

An Apple Galette made from the heart and given to the apple of your eye - Mummy dearest. Sink your teeth into the buttery flaky pastry enveloped in slices of deliciously crisp and sweet New Zealand Royal Gala apple slices that rest on a bed of nutty-sweet almond buttercream filling. A perfect baked treat that will melt any Mummy’s heart.



  • 300g plain flour
  • 1 tsp caster sugar
  • 1/2 tsp salt
  • 200g cold salted butter, cubed
  • 1 tbsp apple cider vinegar
  • 4 tbsp ice water

Almond paste:

  • 60g almond flour
  • 60g powder sugar
  • 12g egg white

Almond Cream Filling:

  • 110g almond paste (above)
  • 2 tbsp unsalted butter, room temp
  • 1 tbsp plain flour
  • 2 tbsp sugar
  • 1 egg yolk
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 4 or 5 NZ Gala Apples, thinly sliced
  • Egg wash (1 egg yolk + 1 tbsp water)
  • 2 tbsp sugar for sprinkling
  • Melted jam to brush the apples (optional)
  1. In a mixer, combine all of the pastry ingredients together except for apple cider and ice water.
  2. When it resembles bread crumbs, add ice water and vinegar.
  3. Knead till it forms a soft non-sticky dough.
  4. Wrap in plastic wrap and chill till needed.
  5. Blend almond flour, powder sugar and egg white to make the almond paste.
  6. Blend almond paste, flour, sugar and yolk till smooth.
  7. Roll out the pastry dough and spread almond butter cream over the centre of the dough, leaving a 2” border.
  8. Arrange apple slices over almond cream.
  9. Fold in edges of dough and crimp the sides.
  10. Preheat oven to 200°C. Brush pastry with egg wash and sprinkle sugar over crust.
  11. Bake for 20 mins, reduce temp to 160°C.
  12. Bake for another 20 mins. Let it cool & enjoy!
