Beer Butter Spice Seafood

INGREDIENTS

Spice Mix

  • 1 Tbsp Celery Salt
  • ¼ Tsp Paprika
  • 2 Tsp Black Pepper
  • ¼Tsp Cayenne Pepper
  • ¼Tsp Ground Dry Mustard
  • 1Tsp Ground Mace
  • ½Tsp Ground Cinnamon
  • 1Tsp Ground Cardamom
  • 2½ Tsp Ground Allspice
  • ¼Tsp Ground Cloves
  • 2Tsp Ground Ginger
  • 1Tbsp Dry Mustard
  • 2Tsp Smoked Paprika
  • 1Tsp White Pepper
  • 1Tsp Ground Nutmeg
  • 1Tsp Ground Cloves
  • ½Tsp Crushed Red Pepper Flakes

Seafood

  • 200g Butter
  • 50ml Olive oil
  • 8Baby Potatoes
  • 4 White Onions (Quartered)
  • 4 Cups Beer
  • 2 Tbsp Spice Mix
  • 1 Tbsp Kosher Salt
  • 10 Sprigs Thyme
  • 4 Corn (Cut into 3 parts and blanched)
  • 500g Mussels (Cleaned and bearded)
  • 500g Clams (Cleaned and de-sanded)
  • 300g Prawns
  • 2 Flower Crab
  • 250g Melted butter
  • 2Lemon (Wedges)
COOKING METHOD

Spice Mix

  1. Mix everything together and keep in air tight container. Can be used at a later date.

Seafood

  1. In a big pot, add olive oil and butter, saute onions and garlic
  2. Saute till onions turn transparent
  3. Add spice mix, thyme and beer. Mix well and stir regularly for 20mins
  4. Add corn cobs and potatoes, cook for 10mins, remove and set aside
  5. Add flower crabs to the pot, stir in boiling sauce until cooked, approximately 8mins
  6. Remove and set aside
  7. Add to pot, mussels, prawns and clams. Cook till shells are opened, discard any unopened
  8. Season sauce well with sugar, salt and pepper.
  9. Toss all ingredients back into pot, stir well and serve with melted butter and lemon wedges
