Gula Melaka Panna Cotta

Imagine this: fluffy panettone, layered with juicy berries, topped with a velvety gula melaka sauce. Now, turn it to reality with this simple recipe by Chef Bill Ho. Inspired by local flavours, this refreshing take on the classic Italian dessert will satisfy your sweet tooth

  • 500g gula melaka
  • 7g gelatin sheets
  • 60ml milk
  • 480ml cream
  • 1 pkt coconut powder
  • 40g sugar
  • 300g panettone, cut into small pieces
  • Strawberries, sliced, or blueberries, to serve
  1. Cook gula melaka in equal parts water, set aside. Soak gelatin sheets in cold water.
  2. Heat up pot. Add milk, cream, coconut powder and sugar. Cook over low heat until fully dissolved.
  3. Remove mixture from heat, add softened gelatin and stir until fully dissolved.
  4. Portion panettone pieces into cups, then fill with gelatin mixture. Chill for 15mins.
  5. Pour gula melaka over panna cotta cups and garnish with berries before serving.
