Lemongrass Chilli Fried Chicken Wings

If you’re thinking of having beer in your next game night or weekend gathering, you need to be having wings as well!

These Lemongrass Chilli Fried Chicken wings are a heavenly mix of sweet, salty and filled with aromatic spices. This recipe is sure to make you and your guests be fighting for that last piece.

Wings are best enjoyed with friends, and beer to wash them down. We recommend pale ales or IPAs as they have strong hop and bitter flavours to play up the spice in those wings, and can also serve as great palate cleansers.

INGREDIENTS

FRIED CHICKEN WINGS

  • 10 Chicken Wings

MARINADE

  • 4tbsp Soya Sauce
  • 2tbsp Oyster Sauce
  • 2tbsp Shao Xing Wine
  • 1tbsp Sesame Oil
  • 1tsp Garlic Powder
  • 1tsp Onion Powder
  • 2tsp Sugar
  • 300ml Buttermilk

DRY BATTER

  • 1 tbsp Cornstarch
  • 2 tbsp Plain Flour

LEMONGRASS CHILLI SAUCE

  • 2 stalks Lemongrass
  • 2 pieces Chilli Padi
  • 2 cloves Garlic (Finely Minced)
  • 80ml Fish Sauce
  • 80ml Sugar
  • 10ml Calamansi Juice
  • 10ml Grapeseed Oil

GARNISH

  • 10g Spring Onions (Finely Cut)
  • Sprinkle Toasted Seasame Seeds
COOKING METHOD

FRIED CHICKEN WINGS

  1. Mix all the marinade ingredients in a big bowl, mix the chicken wings well in the marinade
  2. Leave to soak in marinade for at least 2hrs, ideally overnight
  3. Heat a pot of oil to 150°C,
  4. Coat chicken wings thoroughly with dry batter.
  5. Fry chicken wings for 5mins and set aside
  6. Bring the temperature up to 180°C, fry the chicken wings for another 3mins until cooked and golden brown

SAUCE

  1. On low heat in a non stick pan, add oil and sugar, melt sugar until browned
  2. Add water and mix well, bring to simmer to thicken
  3. Stir in fish sauce, calamansi juice, lemongrass, chilli and garlic
  4. Adjust seasoning with sugar to taste
