Spice up your Chinese New Year meal with this indulgent lucky mala platter!

INGREDIENTS

The Mala Spice-Infused Oil

  • Vegetable oil 100g
  • Butter oil (Let the melt into oil form) 50g
  • Sesame Oil 2 table spoon
  • Star Anise 3g
  • Green Cardamom 5g
  • Fennel Seed 5g
  • Cumin Seed 5g
  • Cloves 4 pc
  • Sichuan Peppercorn/Peppercorn 10g
  • Dried Lemongrass 5g
  • Tangerine Peel 10g
  • Chinese Licorice 8g
  • Bay Leaf 5 piece leaf
  • Dried Red chilli pepper 20g
The Mala Sauce
  • Mala Spice-Infused Oil Prepared and Set Aside
  • Mala Spicy Sauce 20g (Any Brands)
  • Dried Red Chilli Pepper (Chopped) 30g
  • Spring Onion (Chopped In 5cm Length) 1 Stalk
  • Salt 5g
  • Sugar 5g
  • Chili Bean Sauce 40g
  • Cinnamon Powder 8g
  • Nutmeg Powder 5g
  • Ground Tumeric Powder 5g
  • Ground Ginger Powder 10g
  • Garlic Granules 8g
The Mala Platter
  • Potatoes 150g (Shredded)
  • Chinese Sausage 150g (Sliced)
  • Taiwan Sausage 150g (Sliced)
  • Fresh Prawn 200g
  • Tau Kwa 200g (Cube)
  • White Flower Mushroom 150g
  • Broccoli 150g
COOKING METHOD

The Mala Spice-Infused Oil

  1. Use a tall pot or wok, add in all The Mala Oil ingredients and heat gently over medium-low heat, fry till almost brown )15-20 minutes)
  2. Using a slotted spoon, remove all the spice ingredients.
  3. Leave the oil in the aside to be combined with ingredients in the next step.

The Mala Sauce

  1. Use The Same (Part 1) Spice Infused Oil, Add In All The Rest Of The Required Ingredients In (Part 2) To Cook In Medium-Low heat for 5 minutes. Then move on to continue with Part 3 ingredients and do not turn off the heat.

The Mala Platter

  1. Heat up the wok/large pan over high heat, stir fry all ingredients along with The Mala mixture and plate up nicely on a platter.
