Marinated BBQ'd Lamb Kebab with Spicy Raita

INGREDIENTS
Fennel seeds
Smoked paprika
Cumin seeds
Salt and pepper
Olive oil
Garlic
Yoghurt
Lamb leg
Red onion
Cucumber
Zucchini
Mint
Coriander
White button mushroom
COOKING METHOD
  1. Dry roast cumin, fennel seeds and pepper.
  2. Place roasted spice in pestle and grind.
  3. Add garlic and crush to paste.
  4. Remove half from pestle and set aside.
  5. Grind remaining spices and add olive oil.
  6. Place olive oil, spices, salt, pepper and lamb in a ziplock bag.
  7. Seal and refrigerate for 30 minutes.
  8. Dice cucumber, onion, mint and coriander.
  9. Add yoghurt and remaining ground spices to vegetables to make raita
  10. Place meat on the skewer. Alternate between meat, onion, mushroom and zucchini.
  11. Heat the grill pan over a high flame.
  12. Barbecue skewers for a few mins on each side.
  13. Brush skewers with oil while grilling.
  14. Cut foccacia in half.
  15. Top foccacia with raita.
  16. Add meat skewer, more raita and close foccacia.
  17. Pull out skewer to finish.
