Mee Siam Fideua

Fideua is a flavourful one-pot Spanish dish that is prepared with noodles and seafood, then topped off with the zestiness of lemon. Combine this iconic taste with a local favourite, Mee Siam, resulting in a dish so textured and complex yet smooth and comforting. INGREDIENTS
  • 120g Bee Hoon
  • 1 Pack Mee Siam Ready Paste
  • 500ml Vegetable Stock
  • 2 Pcs Tau Kwa (Cut into small cubes)
  • 50g Bean Sprouts
  • 10g Chinese Chives
  • 100g Prawns
  • 2 Pcs Shallots (Slice)
  • 4 Cloves Garlic (Finely Chopped)
  • 50ml Canola Oil
  • To Taste Fish Sauce
  • To Taste Sugar

GARNISH

  • 3 Pcs Quail Eggs
  • 2Pcs Chilli Padi
  • 50g Edamame
  • 5g Fried Shallots
COOKING METHOD
  1. Rinse and soak bee hoon in cold water for 5mins and drain out water
  2. Heat half of the oil In a shallow / paella pan over medium heat.
  3. Fry prawns for 1-2mins, remove and set aside
  4. Add shallots and garlic to the pan and fry till fragrant, and add the mee siam paste
  5. Stir in the bee hoon, chinese chives and beans sprouts
  6. Mix well, allow bee hoon to brown slightly
  7. Add vegetable stock and bring to a simmer, arrange prawns nicely over the mee siam
  8. Put on the lid or cover the pan with aluminium foil and continue to cook until liquid absorbed, estimately 10mins over medium low heat
  9. Remove from heat and garnish with hard boiled quail eggs, chilli padi, edamame, and fried shallots.
