INGREDIENTS
  • 10-15 slices, abalone
  • 1/4 cup mirin
  • 1/4 cup water
  • 3 tbsp miso paste
  • 1 tbsp honey
  • 1 tsp soy sauce
  • 1 tbsp sunflower oil
  • 1 head, broccoli
  • 8-10 small, black fungus, soaked over night
  • 1 stalk, spring onions, sliced
  • Toasted white sesame seeds for garnish


COOKING METHOD
1. Combine mirin, water, miso paste, honey and soy sauce in a bowl to make the marinade.
2. Add abalone slices to the marinade, ensuring that all are well coated. Cover the bowl and refrigerate for at least 3 hours.
3. Heat the oil in a frying pan, place each mushroom discs in the oil and sear each side for 3 minutes. Remove from the pan once it’s done.
4. In a separate pot, blanch broccoli and fungus in boiling water for 2 minutes and remove immediately.
5. On a serving plate, pour remaining sauce as a base layer, add the broccoli with stems facing inwards of the plate, and top up with fungus and glazed abalone.
6. Garnish with sesame seeds and spring onions. Ready to serve!
