Otah Ravioli

This Otah Ravioli is the ultimate complementary fusion dish, combining the strong Singaporean flavours with the sophistication of Italian cooking to invoke a sense of homeliness and warmth - the perfect recipe to experiment with over the National Day weekend. INGREDIENTS

OTAH RAVIOLI

  • 2 Eggs (Large)
  • 200g All Purpose Flour
  • To Adjust Water
  • 2 Pcs Frozen Otah

CURRY FISH HEAD GRAVY

  • 1Pack Curry Fish Head Paste
  • 20g Yellow Onions (Finely Chopped)
  • 20g Garlic (Finely Chopped)
  • 50ml Coconut Milk
  • 50g Lady’s Finger
  • 50g Eggplant
  • 3 Pcs Cherry Tomatoes
  • To Taste Salt & Pepper
  • To Adjust Water

GARNISH

  • 1 Sprig Curry Leaves (Fried)
  • 10g Lemongrass (Finely Julienned)
COOKING METHOD

OTAH RAVIOLI

  1. Make a well in the flour on a clean counter surface, add the eggs in the middle and mix well
  2. Combine the flour and eggs into a dough, dribble a little water if the dough is too stiff.
  3. Lightly flour the surface and knead dough for about 3 – 4 minutes until dough is smooth
  4. Wrap the dough with plastic wrap and allow to rest for a minimum of 30mins
  5. After dough is rested, roll out dough as thin as possible
  6. Using a ring cutter, shape out the ravioli skin
  7. Prepare a egg wash to seal the ravioli
  8. Mash otah into a paste and place in the middle of the ravioli skin
  9. Wrap and seal each ravioli with egg wash.
  10. Cook the raviolis in boiling water for 4mins, toss with 1tsp of oil.
  11. Ready to serve

CURRY FISH HEAD GRAVY

  1. In a pan over medium heat, add oil and lightly saute the onions and garlic until fragrant
  2. Add curry fish head paste, fry for 3-4mins then add coconut milk
  3. Add the vegetables over medium high heat until cooked
  4. Adjust consistency with water and allow to simmer for 10mins
  5. Serve otah ravioli on top of curry fish head gravy and vegetables
  6. Garnish with fried curry leaves and lemongrass
