Prosperity Fried Grouper

Fish is an essential Chinese New Year reunion dish as it represents abundance! Serve up this prosperity fish dish with fresh grouper, luffa and royal chives.

INGREDIENTS

Portions: Serves 4

Luffa and Royal Chives:

  • 2 Tbsp Vegetable Oil
  • 30g Dried Shrimp (Diced)
  • 50g Shallots (Diced)
  • 50g Garlic (Diced)
  • 800g Royale Chives (Washed and cut into 2inch length)
  • 800g Luffa (Washed, peeled and cut into long thin strips 2inch length)
  • Salt to taste

Grouper:

  • Vegetable Oil
  • 20g Ginger (Thinly sliced)
  • 1 Egg (Beaten)
  • 20g Plain Flour
  • Grouper (Filet and deboned)
  • Salt to taste
COOKING METHOD
Cooking the Luffa and Royal Chives
  1. Heat up the wok, add 1tbsp of oil, add in dried shrimp and shallots and sautéed till translucent over low heat.
  2. Add luffa and increase to medium low heat, season with salt and stir fry till cook. Set aside.
  3. Heat up the wok, add 1tbsp of oil, sautéed the garlic for 1 minute, season with salt and stir fry till cook. Set aside.

Frying the Grouper Filet
  1. Season the Snapper with salt and ginger slice. Leave for 5 mins
  2. Pat dry the Snapper with paper towel
  3. Dip snapper fillet in the beaten egg and coat it with flou
  4. Heat vegetable oil to 190°C, fry grouper filet till golden brown. Approximately 6-7minutes.
  5. Once golden brown, remove and set aside on paper towel to absorb excess oil.

Assemble the dish
  1. Plate luffa and royal chives on platter.
  2. Top with fried grouper filets.
