INGREDIENTS
  • 80g dried soba noodles
  • 20 cherry tomatoes, halved
  • 100g firm japanese tofu, cubed
  • 3-4 large cooked prawns, diced
  • 3 whole white button mushroom, sliced
  • 1/3 zucchini, diced
Salad Dressing
  • 1/4 cup greek yoghurt
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds, toasted
  • 1/4 tsp sugar
  • 1/4 tbsp light soy sauce
  • 2 clove garlic, minced


COOKING METHOD
1. Cook the soba noodles in boiling water for 5 minutes.
2. Prepare a bowl of ice and water, add the soba noodles, and filter out the water.
3. In a large salad bowl, add the noodles, tomato, tofu, zucchini, prawn and white button mushroom.
4. Combine salad dressing ingredients in another bowl and pour it over the soba noodle salad.
5. Mix well, sprinkle sesame seeds and enjoy immediately!
