Salt Pepper Beer Battered Squid

INGREDIENTS

BEER BATTERED SQUID

  • 200g Squid
  • 330ml Cold Beer (almost frozen)
  • 220g Self Raising Flour
  • 100g Rice Flour
  • To Taste Salt & Pepper
  • To Fry Canola OIl

SALT PEPPER SEASONING

  • 4 Cloves Garlic (Finely Chopped)
  • 2 Pieces Chilli Padi (Cut in small pieces)
  • 2 Pieces Spring Onions (Cut in small pieces)
  • To Taste Salt, Black Pepper & White Pepper

GARNISH

  • 2 Wedge Lime
COOKING METHOD
  1. Heat up a pot of oil to 180°C and prepare a tray with kitchen towels
  2. Mix cold beer, self raising flour, salt and pepper in a bowl using a fork.
  3. Do not overwork the batter. Lumps in the batter is fine.
  4. Coat the squid thoroughly with rice flour, shake off excess
  5. Dip each piece of squid into the beer batter, ensure is well coated and place into oil
  6. Fry for about 2-3mins and remove from oil onto kitchen towel
  7. In a wok, heat up the 1tbsp of oil over high heat
  8. Add the garlic, chilli padi and spring onions
  9. Fry for about 2mins until fragrant and slightly brown
  10. Return fried squid to the wok, season well with salt, white pepper and black pepper
  11. Stir and toss well to combine everything
  12. Serve with lime on the side
