Shabu Shabu Beef Rolls with Thai Red Curry Sauce

INGREDIENTS
  • 1 packet Baby asparagus
  • 2 Red capsicums
  • 2 yellow capsicums
  • Olive oil
  • Salt
  • Brown sugar
  • 250ml Coconut milk
  • 1 packet Thai red curry paste
  • Tamarind paste
  • 300g beef ribeye shabu shabu
  • Tomato paste (optional)
COOKING METHOD
  1. Cut the red capsicums and yellow capsicums into thin strips.
  2. Fry the red curry paste to make the sauce.
  3. Add coconut milk and stir over medium heat.
  4. Add brown sugar and tamarind paste to taste.
  5. Add water to desired consistency.
  6. (Optional) Add a dollop of tomato paste to deepen colour or tone down the spice.
  7. Set aside.
  8. To make the beef roll-ups, remove a slice of meat and lay it out flat.
  9. Place 2 strips of yellow capsicum, 2 strips of red capsicum and 2 spears of asparagus.
  10. Roll into a snug bundle repeat as necessary.
  11. Heat a little olive oil over medium heat in a deep pan.
  12. Place roll-ups in the pan.
  13. Turn over carefully and ensure beef is just done.
  14. Sprinkle salt to taste.
  15. Remove and place on a platter.
  16. Garnish and serve.
