Spaghetti with Healthy Avocado Sauce

INGREDIENTS
  • 300g Spaghetti
  • 2 cloves garlic, chopped
  • 2 ripe avocados, deseeded and quartered
  • ½ cup fresh basil leaves
  • 2 tbsp freshly squeezed lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup Olive Oil, plus 2 tbsp
  • ½ cup Sweet Corn, drained
  • ½ cup cherry tomatoes, halved

COOKING METHOD
1. Cook spaghetti as per package instructions and drain well.
2. Blend the avocados, basil, garlic and lemon juice together in a food processor. Season with salt and pepper to taste. While blending, add olive oil in a slow motion until emulsified.
3. Add the avocado sauce to the cooked spaghetti and mix well.
4. Mix 2 tablespoons of olive oil, cherry tomatoes and corn together. Add on the spaghetti as toppings. Ready to serve.
