Strawberry And Cream Drop Scones

  1. 1 ¼ cups plain flour
  2. ½ tsp baking powder
  3. 1/8 tsp salt
  4. ¼ cup butter
  5. 100g cream cheese
  6. ¾ cup castor sugar
  7. Egg
  8. ¾ cup fresh strawberries- chopped
  9. 1tsp vanilla essence
  10. 125g white chocolate chips
  1. Preheat the oven to 180ºC and line baking tray with parchment paper
  2. Whisk together plain flour, salt and baking powder and set aside
  3. Beat butter with sugar and cream cheese until its light
  4. Add egg and vanilla and mix well
  5. Gradually add flour mixture and mix until it’s well combined
  6. Stir in white chocolate chips and gently fold in the chopped strawberries
  7. Drop heaped tablespoon of batter onto the lined tray leaving an inch space between
  8. Set in the refrigerator for about 10 minutes before baking
  9. Bake for 13-15 minutes or until the edges become light brown
  10. Let them cool a few minutes in the pan than transfer them to a wire racks to cool completely
