Veggie Go Burger

Pack in the healthy goodness in this one burger that combines 8 different vegetables. Seasoned with an array of spices, served with caramelised onions and creamy avocado spread. This burger is a definitely go to for anyone who is looking for healthy and delicious.

INGREDIENTS
PATTY
  • 60g Quinoa (Cooked to package instructions)
  • 30g Sweet Potato (Peeled, cubed and roasted)
  • 80g Swiss Brown Mushrooms (Sliced coarsely)
  • 30g Carrots (Peel, sliced and cut into chunks)
  • 30g Yellow Capsicum (Cut into cubes and roasted)
  • 30g Broccoli (Cut into florets and blanched)
  • 20g Bread Crumbs
  • 2 Eggs
  • A pinch Cumin
  • A pinch Smoked Paprika
  • A pinch Garlic Powder
  • A pinch Tumeric
  • A pinch Cayenne Powder
  • To Taste Salt & Pepper

SWEET ONION JAM

  • 1 whole Yellow Onion (Peeled and Thinly Sliced)
  • 30ml Balsamic Vinegar
  • 20g Butter
  • To season Salt & Pepper
  • 1 tsp Sugar
  • 1 tbsp Sunflower Oil

BURGER SPREAD

  • 1 whole Ripe Avocado
  • 50g Natural Plain Yoghurt
  • 10g Italian Parsley (Finely Chopped)
  • 1 whole Red Chilli (Finely Chopped)
  • ½ piece Lime Juice
  • To Taste Salt & Pepper

BURGER GARNISH

  • A handful Rocket
  • 1 whole Tomato
  • 2 Wholemeal Burger Buns (Buttered and Toasted)
COOKING METHOD

PREPARING AND COOKING BURGER PATTIES

  1. Pre heat the oven to 180°C and roast carrots, yellow capsicum and sweet potatoes until cooked. Approximately 20mins.
  2. Stir fry mushrooms, onions and garlic in a pan for 3mins
  3. Once all vegetables are cooked and cooled down, add into a food processor
  4. Blend together with bread crumbs and eggs until it becomes a rough paste
  5. Season with cumin, paprika, tumeric, cayenne, salt, pepper and mix in spring onions
  6. Form the mixture into 2 burger patties
  7. Pan fry patties gently in a pan on both sides until lightly brown and crispy on the outside

SWEET ONION JAM

  1. Gently cook the yellow onions with oil in a pan over low heat for 15mins
  2. Add balsamic vinegar to deglaze any residue on the bottom of the pan
  3. Season with salt and pepper
  4. Add butter at the end when onions are soft and caramelised
  5. Remove and set aside for use later

BURGER SPREAD

  1. Mash avocado together with yoghurt into a smooth paste
  2. Mix together with the rest of the ingredients and season well with lime, salt and pepper

ASSEMBLY

  1. Spread the toasted wholemeal burger buns with the avocado spread
  2. Top with rocket, tomato slice and sweet onion jam
  3. Complete burger with vegetable patty
